Wayanad Robusta, Natural

Wayanad, Robusta, Natural is a varietal grown between 700 and 900 metres in the wet evergreen forests of Wayanad, Kerala. The cherries are naturally processed, sun-dried whole rather than pulped first, a method that builds a bold, heavy-bodied cup with notes of dark chocolate, tobacco, and spice. Roasted dark, this lot is grown on Thomas’s farm, where coffee is cultivated alongside a wider food forest of vegetables and coconut.

This coffee is sourced through our partnership with Black Baza Coffee, a direct trade company working with smallholder growers across the Western Ghats and Nilgiris.

Flavor Journey

Dark roast is how this lot is roasted, a level suited to Robusta’s naturally higher density and lower acidity, and one that lets the tobacco and spice notes from natural processing come through fully rather than staying muted under a lighter profile. At this roast, dark chocolate deepens into the dominant flavor, giving the cup a heavier, more grounded character than a lighter roast would allow.

Natural processing already builds significant sweetness and body into Robusta before it reaches the roaster, since the cherry’s sugars ferment into the bean during sun-drying rather than being washed away. A dark roast builds on that foundation rather than fighting it, producing a cup with real weight and a distinct sharpness, better suited to milk and sugar than to being taken black.

Indian filter is the recommended brewing method for this lot. Brew 15 grams of medium-fine ground coffee in a South Indian filter, filling the upper chamber with hot water and allowing it to drip slowly. The extracted decoction can be served with steamed milk and jaggery, a preparation this lot’s dark chocolate and spice notes are especially suited to.

Why Roasters Choose This Coffee

Wayanad, Robusta, Natural comes from Kerala’s Wayanad district, grown between 700 and 900 metres in wet evergreen forest, a lower-elevation, higher-rainfall landscape distinct from the moist deciduous B.R. Hills lots also in this catalog. As a pure Robusta, this coffee carries a strong, bold, somewhat bitter profile, with earthy, woody, and nutty notes, a heavier body, and a distinct sharpness, higher in caffeine and natural bitterness than Arabica, and without the acidity or fruit-forward nuance Arabica lots typically offer.

That profile is exactly what makes this lot useful to roasters building espresso blends: the thick crema and robust kick Robusta contributes are hard to replicate with Arabica alone, and this lot’s natural process adds dark chocolate, tobacco, and spice on top of Robusta’s structural strengths. It performs equally well as a traditional South Indian filter coffee or Vietnamese-style filter preparations.

This lot is sourced through a direct trade relationship with a named grower rather than commodity trading channels, keeping the coffee traceable back to a specific farm. Full detail on the current sourcing partner and the grower behind this lot is below.

Why Roasters Choose Wayanad, Robusta, Natural:

  • A bold, high-body Robusta suited to espresso blends and traditional filter coffee
  • Natural processing that adds dark chocolate, tobacco, and spice complexity
  • Grown in Wayanad’s wet evergreen forest, distinct from B.R. Hills’ moist deciduous lots
  • Fully traceable back to a named grower
  • Sourced through a direct trade relationship rather than commodity channels

Behind the Cup

Luna is the name Black Baza Coffee Co. gives to this lot in their own catalog. Founded in 2016 by Arshiya Bose, Black Baza Coffee is a Bangalore-based direct trade company working with smallholder producers across four regions of the Western Ghats and Nilgiris: B.R. Hills, Palani Hills, the Nilgiris, and Wayanad.

This lot comes from Thomas’s farm in Wayanad, alongside a wider food forest of vegetables and coconut planted across the same land. In 2026, Black Baza Coffee paid him 1,000 rupees per kilo for this coffee, a price set by Black Baza’s own pricing structure, which pays on quality and biodiversity practice rather than commodity market rates.

The name Luna comes from the Indian Moon Moth, one of the largest moths in India, native to the forests where this coffee grows. Naming each coffee after the species it protects reflects Black Baza’s broader approach to sourcing: connecting a cup to a specific ecosystem rather than a generic origin label.

India Coffee Company sources this coffee through our partnership with Black Baza Coffee, making this Wayanad lot known to Black Baza Coffee as Luna available to North American specialty roasters.

About Wayanad Robusta, Natural Coffee Lot

Wayanad sits in Kerala’s share of the Western Ghats, a wet evergreen landscape with higher rainfall and denser canopy cover than the moist deciduous forests further north in B.R. Hills. Elevations here run lower, around 700 to 900 metres, conditions that suit Robusta more naturally than Arabica, which typically needs cooler, higher ground to develop its characteristic acidity and complexity.

Natural processing, the method used for this lot, involves drying whole cherries in the sun rather than removing the skin and pulp first. As the cherry dries around the bean, sugars and other compounds from the fruit ferment into it, building body and sweetness that a washed process strips away. This is part of why natural Robusta lots like this one carry more pronounced tobacco, spice, and dark chocolate notes than a washed Robusta typically would.

The varietal grown here has a long history in South Indian coffee cultivation, valued for its adaptability across growing conditions. Combined with Wayanad’s wet evergreen environment and the natural process, it produces a dense, full-bodied cup suited to dark roasting and to strong, milk-based preparations.

Growing coffee under wet evergreen canopy, as is typical in Wayanad, keeps the land connected to the broader forest ecosystem rather than isolating it as monoculture, supporting the kind of biodiversity the region is known for.
