Coorg Robusta, Washed, Fermented
Sandalkad Estate

Coorg Robusta, Washed, Fermented is a CxR Robusta from Sandalkad Estate, grown between 800 and 1,000 metres on the estate’s lower blocks under a two-tier rainforest canopy among areca nut, pepper, cardamom, and vanilla vines.

This lot is processed through extended fermentation and slow drying, a deliberate method that softens the bitterness and woodiness common to standard commercial Robusta and produces a cup that is markedly cleaner and more rounded, with dark chocolate, warm spice, full body, and a long finish. This lot is a Fine Cup India Top 5 award winner.

Flavor Journey

Roast Approach

Medium roast is the recommended entry point for this lot. Dark chocolate and warm spice lead the cup, the body is full and rounded, and the palate stays clean, since harshness and woodiness typical of standard commodity Robusta from this region are absent. Grown at this altitude, Robusta develops a denser bean than lower-altitude commodity Robusta, needing more energy input to reach first crack, so a higher initial charge weight and a slower ramp through the Maillard phase produces the best results.

Medium-dark roast intensifies the chocolate character and brings spice notes forward. Body stays full and structured, and the long finish carries through milk-based drinks, cutting through crema and steamed milk without disappearing. For espresso blending, an inclusion of 15 to 25 percent, paired with a light to medium roast Arabica, delivers the fuller body and crema enhancement this lot is best suited for.

Lighter roasts leave the chlorogenic acids with a sharpness that suits this lot less well, while very dark roasts trade the chocolate and spice character for carbon, reading as generic.

Why Roasters Choose This Coffee

Coorg, Robusta, Washed, Fermented stands apart from the washed Robusta most international roasters typically encounter, coffee grown at low altitude in Vietnam or Indonesia and processed for speed and volume rather than character. This CxR lot grows in Coorg on the estate’s lower blocks, under a two-tier rainforest canopy among areca nut, pepper, cardamom, and vanilla vines, conditions that produce a denser, more structured bean than commodity Robusta typically delivers.

Roasters value this lot for the deliberate processing choice behind it. Extended fermentation and slow drying give the bean time to break down the compounds responsible for the bitterness and woodiness common in commercial Robusta grades, replacing them with a rounded, chocolate-driven cup. The congensis parentage in the CxR variety itself contributes further to this smoothness, giving the coffee a naturally lower acidity and reduced bitterness compared to standard Robusta grown at equivalent altitude.

Beyond its processing story, this lot offers a cup profile that performs reliably across formats while holding onto its identity. The Fine Cup India Top 5 recognition gives buyers a national-level benchmark for the quality behind the flavor story, alongside a traceable single-estate origin.

In the cup, Coorg, Robusta, Washed, Fermented typically expresses:

  • dark chocolate depth with warm spice undertones
  • vanilla and black pepper layered beneath the chocolate
  • full, structured body with low acidity
  • cedarwood and light woody character on the finish
  • a long finish that stays clean without harshness

Why Roasters Love Coorg, Robusta, Washed, Fermented:

  • A genuinely rare washed Robusta, grown and processed for character rather than volume
  • A CxR variety parentage that delivers a naturally smoother, less bitter cup than standard Robusta
  • Extended fermentation and slow drying that directly address commercial Robusta’s bitterness and woodiness
  • Ideal for medium to medium-dark roast programs, especially espresso
  • Full body and strong crema performance that holds up in milk-based drinks
  • Recognised through the Fine Cup India Top 5 award, giving buyers a quality benchmark behind the purchase decision

Behind the Cup

The CxR variety behind this lot was developed in India for growing conditions like those found at Sandalkad, whose name comes from the sandalwood forest land it grows on. CxR comes from a cross between Coffea canephora and Coffea congensis, a wild species from the Congo Basin, bringing genetic material into the cup that gives this variety its smoother, less bitter character compared to standard commodity Robusta grown at equivalent altitude.

At Sandalkad, the CxR grows among rows of areca nut trees, threaded through with climbing vines of pepper, cardamom, and vanilla, planted on the estate’s lower blocks between 800 and 1,000 metres. This layout reflects how the estate has farmed for over 170 years, matching each variety to the growing conditions it performs best in.

The processing approach at Sandalkad is what sets this lot apart from commodity Robusta sourced at the district level. Extended fermentation and slow drying address the bitterness and woodiness that define commercial Robusta grades, breaking down the tougher mucilage that Robusta carries and giving the beans time to develop sweetness rather than harshness. This is a proprietary post-harvest method the estate has developed and refined over time.

The estate has been farmed by the Bota family, the Siddiqua family of the Navayath community, for six generations and more than 170 years, a heritage carried forward in every lot produced here.

India Coffee Company sources this coffee directly from Sandalkad Estate, making this Fine Cup India Top 5-winning Coorg Robusta available to North American specialty roasters.

About Coorg Robusta, Washed, Fermented Coffee Lot

CxR is India’s most widely planted commercial Robusta variety, developed through an interspecific cross between Coffea canephora and Coffea congensis. The congensis parentage is unusual in global Robusta breeding, introducing genetic material from a wild Central African species that shapes the variety’s cup character and sets it apart from standard commodity Robusta grown in Vietnam, Uganda, or Cote d’Ivoire.

At altitude in Coorg, CxR produces a distinctly different cup from commodity Robusta drinkers might expect. An elevation between 800 and 1,000 metres runs considerably higher than most global Robusta, which is typically grown between 200 and 600 metres. Higher altitude and cooler temperatures, combined with the specific laterite soil conditions of Coorg, produce a denser bean with moderated bitterness and a fuller, cleaner body than low-altitude commodity Robusta typically delivers.

Sandalkad’s processing extends this quality advantage into the post-harvest stage. Extended fermentation breaks down the compounds responsible for the harsh, woody notes common in commercial Robusta grades. Slow drying then preserves aromatic complexity and keeps a more stable green bean than fast-dried commodity lots typically produce.
