Coorg Peridinia Robusta, Red Honey
Riverside Estate
Coorg Peridinia Robusta, Red Honey is a heritage Robusta from Riverside Estate, on the banks of the River Cauvery in Coorg, grown from old Peridinia, a Robusta variety introduced to India from Sri Lanka’s Royal Botanical Gardens at Peradeniya during the Coffee Leaf Rust era.
This lot is processed through anaerobic Red Honey, a method that retains a portion of the cherry’s mucilage during drying, building sweetness and body beyond what a standard washed process delivers. Expect a cup layered with juicy stone fruit and a hint of peach, carried through by a base of dark chocolate.

Flavor Journey
Roast approach
Medium roast is the recommended roast level for this lot, balancing the stone fruit and peach character against the dark chocolate base without either one overwhelming the cup. At this level, the honey process’s retained sweetness comes through clearly while keeping enough structure for the coffee to perform well black or with milk.
Old Peridinia trees, some of the oldest documented Robusta stock still cultivated in Coorg, naturally produce lower yields than younger commercial varieties, a tradeoff traditionally associated with denser, more complex beans. That density means this lot benefits from a slightly extended development time at medium roast, giving the sugars built up during red honey processing time to caramelize fully rather than staying locked inside an underdeveloped bean.
Pushed lighter, the stone fruit and peach notes stay bright but the dark chocolate base thins out, leaving the cup less grounded. Pushed darker, the honey process’s fruit-forward character flattens into generic roast char, losing the specific thing that makes this lot distinct from standard washed Robusta. Medium roast is where the balance holds.
Why Roasters Choose This Coffee
Most specialty Robusta in the global market comes from newer commercial selections bred for yield and consistency. Coorg Peridinia Robusta, Red Honey offers something different: a heritage variety with roots tracing back generations, grown on a five-generation family estate on the banks of the River Cauvery in Coorg.
Roasters value this lot for the combination of old-growth character and deliberate processing. Old Peridinia trees, some of the oldest documented Robusta stock still cultivated in Coorg, naturally produce lower yields than younger commercial varieties, a tradeoff traditionally associated with denser, more complex beans. The anaerobic Red Honey process builds on this foundation, retaining a portion of the cherry’s mucilage during drying to layer in fruit-driven sweetness that a standard washed process would strip away.
Beyond its processing story, this lot offers a cup profile that stands apart from typical Coorg Robusta. Juicy stone fruit and a hint of peach lead the cup, carried by a base of dark chocolate, a genuinely different flavor identity than the chocolate and spice profile common across most washed Robusta from the same region.
In the cup, Coorg Peridinia Robusta, Red Honey typically expresses:
- juicy stone fruit and a hint of peach upfront
- dark chocolate base carrying through the body
- full body with retained sweetness from the honey process
- a clean finish without the harshness common to commodity Robusta
Why Roasters Love Coorg Peridinia Robusta, Red Honey:
- A heritage Robusta variety most of the industry has moved past, grown on trees generations old
- Anaerobic Red Honey processing that builds genuine fruit-forward complexity into a Robusta base
- A flavor profile distinct from typical Coorg Robusta, useful for roasters wanting range within a single origin
- Grown entirely on a single traceable estate, with full post-harvest processing done on site
- Suited to roasters and cafés wanting a Robusta that performs as a genuine single-origin rather than filler

Behind the Cup
Peridinia is a heritage Robusta lineage with roots outside the standard Robusta breeding pool, introduced to Indian coffee growing regions from Sri Lanka’s Royal Botanical Gardens at Peradeniya during the Coffee Leaf Rust outbreak of the late 19th century. Where growers needed a hardier alternative to failing Arabica, Peridinia offered a variety suited to Indian growing conditions while retaining a cup quality distinct from the yield-focused Robusta selections developed since.
Red Honey processing builds on that foundation. Unlike a fully washed process, which removes the cherry’s mucilage before drying, Red Honey retains a significant portion of it on the parchment as the bean dries, allowing natural sugars in the mucilage to soak into the bean as it dries. Conducting this process anaerobically, in a sealed, oxygen-limited environment, gives the estate further control over fermentation, encouraging fruit-forward sweetness to develop without the harshness or over-fermentation risk that can accompany open-air honey processing.
This full cherry contact through drying is what gives the coffee its characteristic sweetness and fruit-driven complexity, a real departure from the drier, more chocolate and spice-forward profile typical of washed Robusta from the same region.
Riverside Estate has remained in the same family for five generations since 1898, growing Arabica, Robusta, and Excelsa alongside jackfruit, fig, rosewood, mahogany, and red cedar. Old Peridinia, planted generations ago, remains part of the estate’s Robusta plantings today, a living link to a variety introduced during a period of crisis for Indian coffee.
India Coffee Company sources this coffee directly from Riverside Estate, making this heritage Coorg Robusta available to North American specialty roasters.

About Coorg Peridinia Robusta, Red Honey Coffee Lot
Old Peridinia is one of the oldest documented Robusta lineages still cultivated in Coorg, planted well before the modern commercial selections most Robusta drinkers are used to. The trees yield less than younger varieties, but that lower yield comes with a denser, more complex bean, the kind of tradeoff that’s largely disappeared from commodity Robusta farming.
Red Honey processing is what turns that raw material into something distinctive. Rather than washing the mucilage away before drying, a significant portion stays on the parchment, letting natural sugars soak into the bean as it dries. Carrying this out anaerobically, in a sealed, oxygen-limited environment, gives the estate tighter control over fermentation, building fruit-forward sweetness without the risk of harsh, over-fermented notes that open-air honey processing can produce.
Grown between 800 and 1,000 metres on the banks of the River Cauvery, this lot benefits from the estate’s integrated shade farming, coffee grown alongside jackfruit, fig, rosewood, mahogany, and red cedar rather than as a single monocrop, a mixed planting structure shaped by five generations of the same family’s stewardship.
