Coorg Robusta, Washed AA
Pambukal Estate
Coorg Robusta, Washed AA is a washed, AA-graded Robusta from Pambukal Estate in Kanoor Village, Kodagu (Coorg), grown between 700 and 900 metres on land bordering the Nagarhole Tiger Reserve.
This lot is cultivated under an agroforestry system intercropped with pepper and native forest trees, on the same estate that also produces a natural, sun-dried Robusta. Washed processing here produces a cleaner, more structured cup than the estate’s natural lot, with notes of cola, black pepper, walnut, and cedar, and a body suited to both espresso and filter brewing.

Flavor Journey
Roast Approach
Medium roast suits this lot well, drawing out the black pepper and cedar notes while keeping the cola-like sweetness and walnut character from flattening into generic roast char. Washed processing gives this bean a cleaner starting point than the estate’s natural lot, so it carries roast development more predictably, with less risk of uneven color from surface sugars that natural-processed Robusta can show.
AA grading indicates the largest screen size among the beans harvested from this lot, and larger beans generally take slightly longer to reach first crack, needing a modest increase in charge temperature or a slightly extended roast time compared to smaller-screen lots, to ensure the center of the bean develops fully alongside the surface.
Because this is Robusta rather than Arabica, the cup carries more body and a fuller mouthfeel at any given roast level, with the black pepper and cedar notes reading as savory-spice rather than bright acidity. Pushed to medium-dark, cola and walnut deepen further and this lot performs particularly well in espresso, where its structure holds up under pressure and contributes to crema.
Why Roasters Choose This Coffee
Coorg Robusta, Washed AA comes from Pambukal Estate, a three-generation family farm in Kanoor Village, Kodagu, grown between 700 and 900 metres on land bordering the Nagarhole Tiger Reserve directly. The estate’s agroforestry system, intercropping the coffee with pepper and native forest trees, gives this Robusta a growing environment shaped by forest proximity rather than open, cleared plantation land.
Roasters value this lot for its washed processing, a less common choice for Indian Robusta at this scale, producing a cleaner cup than natural or unwashed lots typically deliver while still carrying full Robusta body and structure. AA grading means this lot comes from the estate’s largest, most uniform beans, supporting consistent roast development across a batch.
In the cup, cola and black pepper lead, layered over walnut and cedar, a savory, spice-forward profile distinct from the sweeter, fruit-forward character of the estate’s natural-processed lot from the same land. This gives roasters two genuinely different expressions of Pambukal’s Robusta to choose from, both traceable back to the same three-generation family estate.
In the cup, Coorg, Robusta, Washed AA typically expresses:
- Cola and black pepper upfront
- Walnut character through the body
- Cedar and light woody notes on the finish
- Full body suited to espresso and filter brewing alike
Why Roasters Love Coorg, Robusta, Washed AA:
- A washed Robusta, a less common processing choice that produces a cleaner cup than typical natural or unwashed Indian Robusta
- AA grading, indicating large, uniform bean size for consistent roasting
- Grown directly bordering the Nagarhole Tiger Reserve, under genuine forest-edge agroforestry
- A savory, spice-forward cup profile distinct from fruitier natural-processed Robusta from the same region
- Fully traceable to a single, three-generation family estate

Behind the Cup
Pambukal Estate sits in Kanoor Village, Kodagu, roughly 500 metres from the Nagarhole Tiger Reserve. The estate is owned by Vaanu Timaya, whose grandfather planted the first coffee cultivation here in the 1950s. His son continued the estate, and it is farmed today by the third generation of the same family.
This washed AA lot comes from the same 30-acre estate as Pambukal’s natural, sun-dried Robusta, grown under the same agroforestry system intercropping pepper and native forest trees. Where the natural lot is left to sun-dry as whole cherry, building sweetness and fruit character into the bean, this lot is pulped and washed before drying, stripping the mucilage away entirely and producing a cleaner, more structured cup that leans into cola, black pepper, walnut, and cedar rather than fruit-forward sweetness.
The estate takes its name from Pambu-Kal, a rock formation on the land resembling a cobra’s hood, a landmark that has stood on the property since before the estate itself was planted. Vaanu Timaya planted his own first coffee sapling here at sixteen years old; those trees are now over thirty years old and still bearing cherries.
India Coffee Company sources this coffee directly from Vaanu Timaya at Pambukal Estate, making this washed, AA-graded Robusta available to North American specialty roasters alongside the estate’s natural-processed lot.

About Coorg Robusta, Washed AA Coffee Lot
Kanoor Village sits in Kodagu, roughly 500 metres from the boundary of the Nagarhole Tiger Reserve, a location that places growing conditions directly adjacent to protected forest rather than at a remove from it. At 800 metres elevation, growing conditions here support a denser bean than lower-altitude commodity Robusta produces, cooler temperatures slowing cherry development and building more structure into the finished cup.
Washed processing, used for this lot, involves pulping the cherry to remove the skin and fruit shortly after harvest, then fermenting and washing away the remaining mucilage before drying. This is a less common choice for Indian Robusta, most of which is naturally processed or handled with less precision, and it produces a notably cleaner, more defined cup than either extreme, letting the cola, black pepper, walnut, and cedar notes come through without the fruit-forward natural sweetness masking them.
AA grading refers to bean size, based on screen sieves that sort beans by diameter, with AA representing the largest, most uniform screen size available from a given harvest. Larger, more uniform beans support more even heat absorption during roasting, contributing to consistency this lot offers roasters batch to batch.
The estate’s agroforestry system, coffee grown alongside native forest trees rather than as an isolated monoculture, keeps the land functioning as an extension of the neighbouring tiger reserve rather than a cleared buffer around it.
